Potatoes, Peppers and Onions

Ingredients:

  • 2 large Russet potatoes (8 oz each)
  • 2 large bell peppers (any color)
  • 1 medium onion
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper

 

Directions:

Wash and dice the potatoes (skin on).

Once the potatoes are diced, rinse them well in a colander or mesh strainer (to remove some of the starch).

Dry the potatoes with a paper towel, set aside.

Chop/dice the onion.

Remove the inside membranes of the bell peppers. Dice the peppers and set aside.

Mix the potatoes, onions and peppers together in a large mixing bowl.

Heat a large pan on the stovetop (high heat).

Add the vegetable oil, potatoes, peppers and onions to the pan.

Sprinkle with the garlic powder, paprika, salt and pepper.

Cook for about 20 minutes (rotating and stirring every 5 minutes or so).
