INGREDIENTS

For the salad:

  • 4 ears of sweet corn, cooked
  • 1 bell pepper, diced
  • 1/2 cup grape tomatos, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup feta cheese

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/8 teaspoon salt

DIRECTIONS

1 In a large bowl, combine corn, bell pepper, tomatoes, onion, and basil.

2 Whisk together dressing ingredients and toss with salad.

3 Toss with feta cheese.

4 Serve cold.
