WEIGHT WATCHERS CHOCOLATE WHOOPIE PIES

INGREDIENTS: 

  • 1/4 tsp table salt
  • 1 tsp baking soda
  • 1/4 cup unsweetened cocoa powder
  • 1 egg white
  • 2 Tbsp light olive oil
  • 2 Tbsp butter, softened
  • 1/2 cup of sugar
  • 1 cup whole wheat flour
  • 1/2 cup whole milk
  • 3/4 cup marshmallow crème

 

INSTRUCTIONS:

  1. Heat oven to 425 degrees
  2. Whisk together baking soda, flour, cocoa and salt
  3. Mix oil, butter, sugar and egg white until a fluffy using an electric mixer
  4. Add milk and on low speed mix together
  5. Cover a baking sheet with parchment paper and use a spoon to drop batter onto baking sheet
  6. Bake 5-7 minutes, you know when they are done when they spring back when pressed
  7. Let cool completely, once cool add marshmallow creme to 1 side of pie and then place the other side of pie on top
